Sweet and salty, crunchy and smooth, this easy to make holiday candy is SO yummy!!! Made with almond flour crackers and coconut sugar for a healthier twist on the traditional saltines and brown sugar sweet treat.
Preheat oven to 400F. Line a bake sheet with parchment paper, allowing the parchment to go over the edges so you can easily remove the finished product! Line the bottom of the pan with the almond crackers, side to side. Set aside. In a small sauce pot add butter and coconut sugar. Stirring constantly, bring to a boil, then immediately bring heat down to a simmer. Stirring constantly allow it to thicken for 4 minutes. Remove from heat and pour over the crackers. Use the back of a spoon to smooth it over the crackers evenly. Place in the oven to bake for 4 minutes. Remove from oven and drop the chocolate chips evenly across the pan. Let it sit for 5 minutes, so the chocolate can melt from the heat off the pan. Using the back of a spoon spread the melty chocolate evenly. Allow to set until completely cooled and hardened, before breaking into pieces!
