These quick, easy, refined sugar-free donuts are packed with protein and can be baked in a muffin tin if a donut pan isn't available. They are perfect for meal prepping healthy treats.
Preheat oven to 350 F (175 C).
To make flax eggs: In a small bowl, combine 2 tablespoons of flax meal and 4 tablespoons of water, whisk to combine, and set aside for 5 minutes to gel.
For wet ingredients: If using a blender, add the 2 spotty bananas, 1/2 cup almond milk, 1/4 cup olive oil, and 1/2 cup coconut sugar, and blend until smooth. If not using a blender, mash the bananas with a fork, then add the remaining wet ingredients and combine.
For dry ingredients: In a separate bowl, combine 1 cup brown rice flour, 40g (1 scoop) vanilla protein powder, 1 tsp baking powder, 1/2 tsp baking soda, and a pinch of salt.
Add the gelled flax eggs to the wet mixture and fold in with a spatula. Then, add the wet ingredients to the dry ingredients and fold together until just combined.
Fold in any additional mix-ins, such as chocolate chips. Pour the mixture into a donut pan (or muffin tin) and bake at 350 F (175 C) for 10 minutes or until golden.
