Vegan Breakfast Sandwich

Add all your sundried tomato pesto ingredients (sundried tomatoes, oil from sundried tomatoes, walnuts, fresh tomato, fresh oregano, nutritional yeast, salt) to a blender or food processor and blend until desired consistency (chunky or smooth), then set aside. Turn oven on to broil. Lightly toast bread and add to a baking tray. Spread the pesto on the toasted bread and top with sauteed mushrooms and a slice of vegan cheddar cheese. Add to the oven to melt cheese and crisp up the bread for 1-2 minutes. Remove from oven and add the tofu patty, more sauteed mushrooms, and fresh arugula. Slice in half and enjoy!
