Tomato Vegetable Hash with Breakfast Sausage
10 mins prepServes 2
A quick and easy pan-fried vegetable hash designed to use up wilted or overripe produce, featuring onions, mushrooms, brussel sprouts, and leeks in a tomato sauce. Optionally served with vegan breakfast sausage to make a hearty meal.
1. Heat a pan to medium heat and add your cooking oil or butter.
2. Add onions and mushrooms first, cooking them longer until mushrooms are browned and onions are caramelized.
3. Layer some seasoning down at the beginning of the cook.
4. Add brussel sprouts and leeks and cook for another few minutes.
5. Pour some tomato sauce over everything and toss to combine.
6. Turn heat to low and place a lid over the top so the sauce and veggies can marinate together for 2-3 minutes.
7. Plate the hash and top with fresh parsley. Serve hot, optionally with breakfast sausage.
