This rich and satisfying high-protein vegan recipe is full of flavor, perfect as a "meat" and potato style meal or for meal prep to add to salads. Vegan butter adds richness, but olive oil or soy milk can be substituted for a lower-fat option.
Preheat oven to 350 F and line a baking tray with parchment paper, set aside. Slice your tofu brick in half, then lightly create the accordion style slicing half way through each brick – as shown in video. Lay on parchment lined baking sheet. To a mixing bowl add: melted butter, nutritional yeast, red wine vinegar, hot sauce, turmeric powder, and salt, whisking to combine. Using a spoon coat the tofu pieces with the marinade. Bake for 20-22 minutes or until tofu is crispy and sauce is set into the tofu. Enjoy with steamed asparagus and garlic butter smashed potatoes.
