Sugar Cookie Oat Protein Cake

Preheat oven to 350F. Grease a pie dish with oil or plant butter and set aside. Make your flax egg (1 tbsp flax meal + 2 tbsp water) and set aside to gel. Mash your banana and add almond milk, flax egg, almond butter, and almond extract. Mix well to combine. Add oat flour, vanilla protein powder, baking powder, and salt, then fold in gently. Add batter to the greased pie dish and smooth the top. Bake for 9 minutes at 350F or until browned around the edges. Allow to cool completely before removing from the pan to frost.

For the frosting: Melt coconut butter and almond milk together, whisking often. Add vanilla protein powder, almond extract, and maple syrup, then whisk everything well to combine. Pour over the cooled cake and even the frosting out with a spoon, then add sprinkles!
