A simple, fitness-friendly meal prep recipe for a high protein vegan lunch. It's packed with flavor and protein, and full of immune-boosting ingredients like raw garlic and ginger.
1. Prepare your rice: Rinse well, then add to a pot with water, oil, and salt. Follow package directions as cooking time varies depending on the style of rice used.
2. Bring a small pot of water to a boil.
3. Once the water is boiling, add the green beans and cook for 4-5 minutes.
4. Drain the green beans and rinse with cold water immediately to stop further cooking. Set aside.
5. Gently slice your medium firm tofu into cubes and set aside.
6. Prepare the sauce: Mince the garlic and ginger really well and add them to a small bowl. Add the soy sauce liquid aminos (or regular soy sauce), rice vinegar, sriracha, and sesame seeds. Whisk to combine until well incorporated.
7. To plate (for meal prep containers): Add one cup of cooked rice, 10 green beans, and half a brick of soft tofu cubes to each of four containers.
8. Divide the prepared sauce into 4 equal servings and drizzle over the tofu in each container.
9. Allow everything to cool completely before sealing the containers.
10. Enjoy all week!
