A cozy, easy, homemade high-protein vegan Red Lentil Tikka Masala, featuring red lentils, chopped tomatoes, and tikka masala sauce, designed for a quick and satisfying meal prep.
Preheat a sauce pot to medium heat and add oil, coating the bottom.
Add onion and a pinch of salt, allowing to saute 3-4 minutes, or until softened.
Rinse and drain your red lentils.
Once onions are softened add: chopped tomatoes, tikka masala sauce, and red lentils, stirring to combine.
Fill the tikka masala jar twice with water, adding to the pot.
Bring the pot to a boil, then immediately reduce heat to a simmer.
Allow to cook 20 minutes, or until red lentils are cooked through.
Once the lentils were close to done I added the coconut milk, ½ cup at a time to see how creamy I wanted it to be, I went with the full cup!
Add ½ tsp salt and stir through.
Plate with a starch of your choosing and a big helping of fresh cilantro!
Enjoy!
