These Peppermint Brownie Protein Bars are easy to make, super nutritious, and absolutely delicious. The peppermint extract is added to the ganache, but can also be added to the base for a stronger flavor.
For the base: Add tahini, chocolate protein powder, cocoa powder, almond flour, maple syrup, optional espresso, and sea salt to a bowl and mix well to combine, forming a dough. Line a tray with parchment paper and form a rectangle with the dough. Add the dough to the freezer to firm up.
For the Peppermint Ganache: Heat ¼ cup + 2 tbsp full fat coconut milk (canned) to medium heat on the stove. Once simmering, remove from heat. Add ¾ cup chocolate chips to a small bowl and pour the warmed coconut milk over the chocolate. Stir, melting the chocolate through, then add 1 full tablespoon peppermint extract.
Assembly: Remove the bar from the freezer and pour the peppermint ganache over the bar, smoothing evenly. Place in the fridge or freezer to firm. Once firm, slice into 16 squares. Enjoy!
