A protein bar so nice I had to share it twice! I make a lot of protein bars, like at least once a week for the past 6 months, and so to pick a favorite well.. It’s a demanding task. But these soft, chewy, fudgy, little squares just won’t get outta my mind.. 🤤🤝😎

Instructions

Add everything to a bowl (except the vanilla cookies), and mix really well with a spatula, forming a dough. Lay a parchment paper down and roll the dough onto it. Flatten the dough square, either in a pan or using your hands to shape. Add 16 cookies to the top, pressing down firmly to set into the dough. Place in the freezer to firm up, 30 minutes. Remove from the freezer and slice into 16 squares. Place finished squares in a sealable container and keep in the fridge or freezer (my preference), until ready to eat!
