This combo of fresh summer peaches and Glutenull Ginger Square Cookies is next level. With chewy dates, cranberries, lemon and vanilla in each cookie, this crumble is exceptionally delicious and incredibly easy to make. Just grab a box of the Ginger Square Cookies at any Sobeys or Safeway across Canada and pair it with fresh, juice peaches for the ultimate summer dessert.

Instructions

Preheat oven to 350 F 

To a mixing bowl add: chopped peaches, coconut sugar, lemon juice, ginger, cinnamon, and a touch of salt, tossing to combine

Pour seasoned peaches into a pie dish and set aside

Add the @glutenull ginger cookies to a high speed blender and pulse until a fine crumb

Option to keep it chunkier by pulsing to desired consistency 

Add cookie crumbs to a bowl and mix with melted butter

Pour over peach and spread evenly across the top

Bake for 15-18 minutes or until lightly browning on top
