Add your frozen blueberries, lemon juice and date sugar to a sauce pot and bring to medium low heat.
Allow blueberries to cook 4-5 minutes, or until bursting.
Smash the blueberries with the back of a spatula.
Remove from heat and stir in chia seeds, set aside to gel, 10 minutes.
Base: to a mixing bowl add peanut butter, oat flour, and date syrup, mixing until a dough forms.
If the base is too sticky add 1 tbsp at a time oat flour.
Too dry, add 1 tbsp peanut butter at a time.
Line a sheet with parchment paper and spread the base across it forming a rectangle.
Evenly spread your blueberry jam over the base, set aside.
Crumble: add all the crumble ingredients into a small bowl and mix with your hands, forming a loose and crumbly mixture.
Evenly spread the crumble across the bars.
Set the bars in the fridge so the jam can cool completely.
Once cooled, slice into 12 small squares.
Keep in a sealed container in the fridge all week!
