This recipe for Lemon Tofu provides a plant-based, high-protein meal, suitable for meal prepping. Crispy baked tofu is coated in a savory-sweet lemon-ginger sauce and served with rice and steamed broccoli.
Preheat the oven to 350 F and line a baking tray with parchment paper. Cut the tofu into large cubes and add them to a mixing bowl. Add arrowroot powder, lemon pepper spice, and oil, tossing to combine. Spread seasoned tofu across the baking tray and bake for 22-25 minutes or until nice and crispy! Make the sauce: to a small bowl add chopped ginger and garlic, liquid aminos, lemon juice, and date syrup. Mix well to combine. Add baked tofu and sauce to a pan and bring to medium heat. Cook until the sauce is thick and coating the tofu. Tofu is done once the sauce is completely sticking to the cubes. Plate with rice and gently steamed broccoli.
