These peanut butter cookies, or almond butter or cashew butter, literally whatever your heart desires cookies are SO easy to make, perfectly soft and chewy, and a total crowd pleaser. Swap the peanut butter for any nut or seed butter of your choice to make it your own. Add in mix-ins like chocolate chips, nuts, seeds, or pretzels! This is the most perfect base recipe you can absolutely run with💪

Instructions

Preheat the oven to 350 F and line a baking tray with parchment paper, set aside.

In a small bowl add your flax meal and water and mix, set in the fridge to gel, 5 minutes.

To a mixing bowl add peanut butter, coconut sugar, bakings soda and salt.

Add your flax/water mixture and mix everything together really well.

Keep mixing until a thick dough has formed, this is a cookie dough you can really, really mix, don’t worry about being gentle.

Once a thick dough has formed, using either an ice cream scoop or your hands form 12 cookie balls and add them to the baking tray.

For classic style: use a fork to press each cookie down and to form the classic lines on the top.

Alternatively use your hands and press each cookie down.

Top each with a little more salt if desired.

Bake cookies for 9 minutes.

Remove from the oven and allow cookies to cool for at least 20 minutes. They will be crumbly until cooled.
