One bowl and so easy and delicious!! We didn’t have any Easter celebrations yesterday so I had to make something delicious for us to indulge in over the weekend and this cookie loaf was IT 🤤👌 Hot tip: have even 10 minutes better patience than I did and wait to cut it until it’s even slightly cooled🙂

What you need

coconut sugar

⅓ cup coconut sugar

banana

coconut flour

½ cup coconut flour

baking powder

½ tsp baking powder

vanilla extract

1 tsp vanilla extract

salt

⅛ tsp salt

semisweet chocolate chips

½ cup semisweet chocolate chips

baking soda

¼ tsp baking soda

almond flour

¼ cup almond flour

dairy free milk

¼ cup dairy free milk

dried chickpeas

3 tbsp dried chickpeas

Instructions

Preheat oven to 375F.

Line a loaf tin with parchment paper or grease tin with oil.

Add your banana to a bowl and mash well with a fork.

Add aquafaba, dairy free milk, coconut sugar and vanilla.

Mix well to combine.

Add coconut flour, almond flour, baking powder, baking soda and salt.

Fold everything together until just combined.

Add in chocolate chips and fold in.

Add the batter to your prepared loaf tin and smooth the top with your spatula.

Add more chocolate chips to the top - if desired.

Bake for 16-18 minutes rotating half way through bake time.

Loaf is done once it’s golden on top and slightly cracking.
