An absolutely delicious, flavor-packed vegan sandwich featuring melty vegan cheddar and a herbed green sauce. High in protein with nutrient-dense spinach, garlic, and tahini, making it feel like both a restaurant meal and healthy meal prep.
1. Add your tofu slices, ¼ cup dairy free milk and a pinch of salt to a shallow bowl and allow to soak for 1-2 hours.
2. Make your herb garlic sauce: add ½ cup chives, 1 cup spinach, 2 cloves garlic, ¼ cup tahini, 1 tbsp lemon juice, ¼ cup oat milk, and 1 tsp salt to a blender and blend until smooth.
3. Set sauce in the fridge while you make everything else; it will thicken more over time.
4. Preheat oven to 375 F and line a baking tray with parchment paper.
5. Remove tofu from the salted milk mixture, and set aside.
6. Add your cajun seasoning mix to a plate and dip the tofu slices into it, coating both sides.
7. Bake cajun tofu pieces for 18-20 minutes or until crispy.
8. Remove from oven, add 1 tbsp shredded vegan cheddar to each tofu slice and place back in the oven to melt for 2-3 minutes.
9. Toast your bun and spread each side with 1 heaping tbsp herb and garlic sauce.
10. Add cajun tofu and cheese pieces to the bread and top with more spinach if desired.
11. Enjoy!
