Cabbage Salad

1. Prepare your veggies: slice the purple cabbage thin, shred the carrot, slice the red onion thin, and chop the greens. Add them to a salad bowl.
2. To prepare the dressing: add mayo, lemon juice, dijon mustard, rice vinegar (or substitute with other vinegar/more lemon juice), maple syrup, paprika, black pepper, and sea salt to a small bowl and whisk to combine.
3. Pour the prepared dressing over the vegetable mix in the salad bowl and toss really well to combine.
4. Transfer the salad to a container and seal.
5. The salad can be enjoyed right away, but it is even better the next day!
