A high protein, vegan, and dairy-free recipe for AB & J Protein Bars, perfect as a healthy snack. These bars feature an almond butter base, a mixed berry chia jam, and a chocolate coating.
To a mixing bowl add: almond butter, protein powder, maple syrup, almond flour, and mix well forming a dough. Press into a rectangle on a cutting board or bake tray that fits in the freezer - I just used my hands, then rolled the surface smooth with a glass! Place into the freezer to firm up. Make jam: add frozen berries to a small pot and heat to medium, pressing down on the berries with a spoon, once berries are mostly “popped”, remove from heat and add chia seeds, mix in and set aside to gel - 5 minutes. **I used more chia seeds for this than I usually would for a regular jam because I want it to be thicker in the bar with little to no liquid left** Remove bar from freezer and spread the thick jam evenly over it. Place back in the freezer to harden completely - at least one hour, I left mine overnight! Remove from freezer and cut in 16 bars. Place back in the freezer while you melt your chocolate. Coating: melt chocolate with oil, whisking together. Pour into a large bowl with a flat surface *something you can fit the bars in flat*. Add one frozen bar into the chocolate at a time coating in the chocolate. Place a parchment paper and top with sea salt - the chocolate will firm quickly! Continue until all bars are coated! I keep my bars in the freezer but they’re perfect and slightly softer, from the fridge too! Enjoy!
