This low carb and high protein, quick stove top pizza is SO delicious!! This salty, spicy, apple version is insanely good and perfect for the fresh start of fall, but use whatever toppings you like!
To a mixing bowl add chickpea flour, water, olive oil, italian seasoning, whisking to combine.
Set mixture aside for 15 minutes to thicken.
Preheat oven to 375 F and line a baking tray with parchment paper.
To a small bowl add crumbled tofu and cajun seasoning, tossing to coat.
Spread tofu across baking tray and bake for 18-20 minutes or until golden and crispy.
Slice your apple into super thin pieces, set aside.
Once chickpea batter is ready:
Preheat a non stick pan to medium heat.
Pour mixture into pan, coating the bottom with a thin layer.
Reduce heat to medium low and allow to cook 4-5 minutes. It should be bubbly and almost cooked all the way through.
Flip it and top with with feta crumbles, cooked cajun tofu, and apple slices.
Cover and reduce heat to low.
Cook just long enough to heat everything through and melt your cheese.
Gently remove pizza by sliding onto a cutting board.
Top with fresh arugula and date syrup.
